Aloo Tamatar Ka Jhol
INGREDIENTS
- Potato 250 grams
- Onion 50 grams
- Tomato – 100 grams
- Ginger – 2 cm piece (finely chopped)
- Jakhiya – 2 tsp
- Jambu – 1 pinch
- Garlic 4 to 5 cloves
- Red chili powder – 1 tsp
- Turmeric Powder – ½ tsp
- Garam masala powder – ½ tsp
- Fenugreek seeds – 1½ tsp
- Coriander leaves – 1 tbsp (chopped)
- Cumin – 1 tsp
- Ghee – 5 tsp

- Total Time : 30 – 45 mins
- Preparation Time : 10 – 15 mins
- Cooking Time : 25 – 35 mins

COOKING PROCESS
- Put the frying pan on medium heat. Add ghee and let it heat up. Put cumin and fenugreek seeds in hot oil.
- When the seeds crackle, add garlic clove and chopped ginger.
- Add Jakhiya & Jambu. Fry the garlic and ginger till they turn light brown.
- Now add chopped onion. Fry till the onion becomes soft.
- Add red chili and turmeric powder, chopped tomatoes and cook for a minute or two.
- Fry till the tomatoes become soft.
- Add a cup of water, add the peeled and diced potatoes and garam masala and cook on medium heat for about 10 minutes.
- Add 2- tea cup or more water and salt to taste and cook on low flame for 10 minutes till the potatoes become soft.
- Remove from fire and sprinkle chopped coriander. Serve it hot.
